This delicious Alaskan Granola Recipe hails from the Kachemak Bay Wilderness Lodge across the bay from Homer, AK. It's so good I begged for the recipe when we visited and it's so good I wanted to share jars of this magical mix with family and friends this Christmas - which of course includes YOU :)
My only tweak to the recipe was adding 2 drops of Cinnamon Bark to the olive oil and maple syrup - in order to emulsify the essential oil making for easy and thorough distribution throughout the granola before baking.

Alaskan Granola, Wilderness Lodge Style
Preheat oven to 300 F
3 Cups Old Fashioned Rolled Oats
1 Cup Hulled Pumpkin Seeds
1 Cup Hulled Sunflower Seeds
1 1/2 Cup Unsweetened Coconut Shavings (chips)
1 1/2 Cup Halved Pecans
2/3 Cup Maple Syrup or Honey
1/2 Cup Extra Virgin Olive Oil
1/8 Cup Brown Sugar (optional)
1 t Sea Salt
2 drops CW Cinnamon Bark EO (optional)
Spread out on large cookie sheet, bake for 1 hr total.
Set timer for 30 min, take out and flip granola, back in the oven we go.
Set timer for another 30 min, take out and don't touch until cool!
